No-Bake Cookies Recipes To Try During The Lockdown

In this time of time being lockdown due to pandemic really affected all of us, and truth to be told it really sucks!

But whether we like it or not, this pandemic opened up a lot of opportunities for us to try new things, to become close with our families, and to learn and do things that we never did nor learned before. Admit it guys! You even learned how to cook or bake and admit it, you never tried it before right?

I’m absolutely sure that all of us craved the foods that we used to eat when we can still go out and buy it anytime with no problem at all.

Well! you don’t need to worry anymore, we’ve provided something for ya’ll! This is a great recipe for the old favorite! No-bake cookies made with oatmeal, peanut butter, and cocoa.

Start timing when mixture reaches a full rolling boil; this is the trick to successful cookies. If you boil too long the cookies will be dry and crumbly. If you don’t boil long enough, the cookies won’t form properly.

Ingredients

  • Sugar
  • Butter
  • Milk
  • Unsweetened cocoa powder
  • Vanilla
  • Quick oats
  • Peanut butter

Set saucepan over medium heat (I like to use the largest burner on the stove) and begin whisking. Cook and whisk frequently until it reaches a boil, then once it reaches a full boil stop stirring and let it boil for 1 minute.

Remove the mixture from heat then immediately add in vanilla, peanut butter and oatmeal. And stir to blend well.

Drop mixture onto prepared parchment dropping 2 Tbsp at a time (a medium cookie scoop works well here or just use two large spoons).

Let cookies set then enjoy! If you want to speed up setting transfer to the refrigerator. Store the cookies at room temp in an airtight container.
